I followed the manual to create a test backup to see how the process works and see what files are created. Two questions have come up.
1) Where are the backup files located?
2) How do you stop the schedule?

Neither topic seems to be covered in the manual.

Any guidance will be greatly appreciated since I set the schedule to hourly so as to generate data quickly.

I found where the backup scheduled is kept. Under Administration group -> Schedule. There you will find all the scheduled backups in a table called "Scheduled Task List". You can modify or delete the schedule.

Still haven't figured out where they store the backup data though.

Which version? You have opened the question in OV 3.5. This version is very very old and should be updated.
