Which will allow me to see all IP's + MACs + VLANS ?

show vlan
show mac-learning

The switch will only show IP Adresses it communicates with - and the configuration determines what you are able to see.
show arp
show lldp remote-system
show ip ospf neighbor
etc. etc.

I would also recommend a software upgrade. That one is 5 years old and super outdated.
