Could you please someone explain what is the difference in the release edition R2 and R1 ?

These are revisions. Check the release notes for details.

Is it possible to upgrade a switch from R1 to R2 or R3 or I have to stick with the same revision ?

You can install any revision, as long as the software matches the switch model.
