Is there any way to have Auto Answer off in headset mode.

change the "Time before auto. conn. in headset mode" timer from 1s to 90s.

Thanks a heap, Is there a way to have the handset ring sound a normal sound.

I'm not sure, but there are two timers for the auto answer in the ringing parameters (Memory read and write / Other labels parameters)

You can find this info in the Technical Communication N80 Noteworthy Addresses ed.06 file.
