I will give it a shot, i did it once and making some minor changes OXE worked up in a VMWare station, however a lot of errors wake up about hardware.But i'm sure that making some more fixes it would work. After 2 days i drop the intention because had no time to play, but it will be great to do it with help.
My partners here have the knowledge but are very afraid to try new things so i have to jump to the pool usually alone, that is what the old Alcatel school left here.

This is a good idea to run the OS into VMWARE, but then.. with no crystal hardware, what can you do ? Because the phone application won't start, hu ?

The main idea will be play with the linux that is in it. Destroy it or damage what ever you need. Install new apps and see if they can run or not.
May work but not on VMWare

Don't know about the OXE but the OXO is using a different bios than a standard PC. You need something like Bochs to load the bios as well.
For the OXO i am almost sure that the HD is crypted as well. So unless you now how its not easy to clone the disk (with linux dd? maybe?) and use it as an image
